The original recipe for this has come from my friend Nikki Phillips, I have since amended it to include berries and seeds. It is very simple and tastes yummy, so please limit the portions. Everything in moderation eh?!

3 cups or 500g cashew nuts
1 tbsp coconut oil

2tsps of pumpkin seeds
1 tbsp Sunflower seeds and 1 tbsp of dried cranberries (or raisins)
1 tsp turmeric
1 cup Coconut flakes
Pinch of salt (optional)
Pinch of pepper

Mix all the ingredients omitting fruit and coconut flakes and spread evenly on a tray linked with a baking paper. Bake for 8-10 mins in a preheated oven to 180°C. Ensure no spaces between for an even bake. Toss after 5 minutes. After 8 minutes add coconut flakes and fruit and mix all in cashew nut mixture. Bake for another 2-3 minutes, ensuring that it doesn’t burn. Cool completely before enjoying as a snack (occasionally a full meal for me 🙂 ).
