The goddess Green Tara represents the wisdom and is a fierce goddess who overcomes obstacles, and saves us from physical and spiritual danger. She is the Mother Earth and as a wisdom goddess this cake is perfect during menopause – for all your menopause symptoms, this cheesecake is rich in nuts and seeds and contains flaxseed and pumpkin seeds. And as Tara, the Mother Earth, it is green! I call it Tara’s cake (it sounds better than menopause cake!)

Base:

  • 140g raw almonds
  • 10 dates, stones removed
  • 2 handfuls of my Golden Snack
  • 2 tbsp coconut oil
  • 1 tsp cinamon

In a food processor or blender, mix all of the above until its well blended and the mixture resembles the bliss balls mixture. If the ingredients are too dry add a bit or water until it all holds together. Spread the mixture evenly in a springform pan and press down to form a flat base. Freeze for 10 minutes, until you make the

Green Layer:

  • 100g of cashews soaked over night, rinsed and drained
  • 100g pre-soaked pumpkin seed and flaxseed
  • 1 tbsp of honey
  • 1 tsp of vanilla extract
  • ¼ tsp of spirulina powder (for colour)
  • Juice of ¼ of lemon
  • 2-3 tbsp of coconut oil
  • 1tbsp of date syrup

In a food processor blend all of the above and spread over the base layer. Return to the freezer and for 20 minutes.

The Pink Layer

  • 140g of soaked cashew nuts (soak overnight,, rinse and drain)
  • 20g ground almonds
  • 4 tbsp maple syrup
  • 1-2 tbsp lemon juice
  • 2 tbsp coconut oil
  • Raspberry and beetroot powder for colour

Blend all of the ingredients and spread over the green layer. Return to the freezer for minimum 1 hour, preferably 4 hours or overnight. Before serving, leave at room temperature for a few minutes before slicing.
