If you love coconut you will love these cookies. And even if you don’t love it, you will still love these cookies. The reason being is because the coconut is pre-soaked and so the flavour isn’t very strong. I used the shredded coconut I used to make my coconut milk (and so the coconut is pre-soaked and drained).
You will need:
- 200g pre-soaked and drained coconut flower/desiccated /shredded coconut
- Pinch of salt (optional)
- 1/2 tsp of baking powder
- Honey or date syrup for sweetening
- 2 tbs of cacao powder
- 100g of ground almond
- 1 tbsp of nut butter (I used my Golden Cashew Nut Butter)
- 100g of oats (if the mixture is too liquid, add more oats)
- Optional: mashed banana
Combine all the ingredients in the food processor.
Spoon onto a baking tray and shape into rounds, leaving space between each cookie as they will spread whilst cooking. You may wish to add cranberries on top to decorate (like in the picture). Bake in the oven at 180C for 20-25 mins until golden in colour. Cool before enjoying with your tea/coffee or Golden Milk.
