Once you try this recipe, you will never go back to the traditional pancakes! The original recipe came from #ocado but we adapted it and added blueberries. My daughter’s idea. She was very proud of this! And they are delicious! You will need:
- 4 bananas
- 4 eggs
- 120g plain flour
- 1/2 tsp of baking powder (can omit)
- 50g of bluberries
- Honey or date syrup for sweetening
- passionfruit pure or passionfruit curd
- berries for berry compote
- Optional: Greek yogurt
Into mashed bananas add eggs and beat, add flour and baking powder and combine all the ingredients into a medium thick batter (add another egg or banana if the mixture is too thick). Add blueberries as whole or mashed and mix it all in.
Spoon the mixture into hot oiled pan (approximately three spoons per pancake) and bake until the top becomes almost dry or starts bubbling up. Turn over and cook the other side.
In the meantime, make the compote from berries (you’ll need about 100-150g of different berries) and a spoonful or 2 of water. Cook on the stove until they become soft. Add a bit of honey or date syrup for sweetening and jar or transfer into a bowl (to be used straight away).
Use passion fruit pure and yogurt as a topping and berry compote and yogurt as another topping for each pancake
Delicious as breakfast or as a healthy desert.
